I planned my menus accordingly--there's no way he'll eat well if I expect him to make stuffed chicken with grilled asparagus and a vinegarette glaze! Ha.
Some of these things are actually things I made ahead of time that make great leftovers, and some of them are freezer food that I wrote down to remind him that it's there for him to eat. He told me he'd eat salad if it was there (as opposed to he won't go to the trouble of cooking veggies), so that's why it's pretty much the only vegetable. And, surprise surprise, some of the recipes are actually simple enough for him to cook by himself. :)
*One other note, this isn't a regular Monday-Sunday menu, but rather, spans through the duration of my trip, which is Thursday-Saturday

- Spaghetti with Vodka Sauce (he like's that better) and Turkey Meatballs (made ahead and frozen)

- Fresh Bread (made in bread machine day before I left)

- Sweet and Sour Chicken w/ brown rice and veggies (made ahead, in freezer)
- Dal Nirvana (he'll make himself)
- Jasmine Rice
- Salad
- Pizza from Papa Murphy's
- BBQ at friend's house for 4th of July
- Popcorn Shrimp
- Salad
- Marinated Grilled Chicken
- Grilled Potatoes
- Salad
- Shrimp Stirfry (frozen veggie bag w/ pre-made sauce)
- Brown Rice
*And then I get home, and John rejoices :)
