- Chicken Scallopini. I don't use a recipe, but was inspired by Macaroni Grill's dish of the same name. Here's pretty much what I do....with less butter. ;)

- Broccoli and Rice Casseroles. This is the second time I've made these. Quick, healthy, yummy one dish meal. And they're cute because they are in single serving dishes. :)
Weekend
- Baked Potatoes
- Ham and Broccoli Quiche. The link is for a different quiche, but this is the base recipe I use, then just change out the vegetables and meat. :)
- Crab Rangoons
